White Bean Salad Recipe

simple veg and bean mix

Ingredients
500 g white beans
3 tbsp olive oil
1 large carrot
150 g green beans
4 tbsp white wine vinegar
1 red onion
Directions
  1. soak 500g beans for 10-12hrs

  2. cook until tender with 2 cloves of garlic in water, rinse with cold water

  3. Finely chop onion and carrot

  4. Chop green beans into 1inch chunks

  5. add all to large bowl, add oil and vinegar, black pepper, oregano, salt, chilipepper to taste

  6. serve chilled
