simple veg and bean mix
| 500 | g white beans |
| 3 | tbsp olive oil |
| 1 | large carrot |
| 150 | g green beans |
| 4 | tbsp white wine vinegar |
| 1 | red onion |
- soak 500g beans for 10-12hrs
- cook until tender with 2 cloves of garlic in water, rinse with cold water
- Finely chop onion and carrot
- Chop green beans into 1inch chunks
- add all to large bowl, add oil and vinegar, black pepper, oregano, salt, chilipepper to taste
- serve chilled
