| 4 | tbs Tomato Paste |
| 1 | large Onion, diced finely |
| 2 | clove garlic |
| 2 | tbs Olive Oil |
| 1 | large Carrot, diced finely |
| 1 1/2 | cup lettuce, roman |
| 3 | cup water |
- Place oil, onions and garlic into a large saucepan. Saute until onions turn transparent.
- Add carrot and continue sauteing for a minute or two.
- Add the rest of the ingredients and season to taste (Tabasco, salt, pepper or anything else you may like to add). Cook on high until vegetables are soft to your liking. You may need to add a little more water if the soup becomes too thick.
- Spoon into bowl and add yogurt, if desired.
