Eggplant Tomato Rice Sautee Mix Recipe

Makes 1 serving


Delicious and Filling Veggie Dish, especially with fresh garden vegetables

Ingredients
100 grams eggplant, finely diced
50 grams green bean, diced
1/4 cup onion, diced
2 tomatoes, diced
50 grams rice, cooked
2 leaves basil, finely chopped
1/2 teaspoon rosemary, finely chopped
1 tbsp olive oil
1 salt to taste
Directions
  1. Heat Olive Oil

  2. Add onions and sautee until transluscent

  3. Add eggplant, green beans & salt

  4. When mix starts drying add tomatoes

  5. Simmer until egglant is done (will vary depending on the size of the eggplant cubes - for faster cookin times make them smaller)

  6. Add basil & rosemary

  7. Add cooked rice

  8. Simmer for another minute to let the flavors mix

  9. Taste and add more salt if needed
