Delicious and Filling Veggie Dish, especially with fresh garden vegetables
| 100 | grams eggplant, finely diced |
| 50 | grams green bean, diced |
| 1/4 | cup onion, diced |
| 2 | tomatoes, diced |
| 50 | grams rice, cooked |
| 2 | leaves basil, finely chopped |
| 1/2 | teaspoon rosemary, finely chopped |
| 1 | tbsp olive oil |
| 1 | salt to taste |
- Heat Olive Oil
- Add onions and sautee until transluscent
- Add eggplant, green beans & salt
- When mix starts drying add tomatoes
- Simmer until egglant is done (will vary depending on the size of the eggplant cubes - for faster cookin times make them smaller)
- Add basil & rosemary
- Add cooked rice
- Simmer for another minute to let the flavors mix
- Taste and add more salt if needed
