Poached Huevos Rancheros Recipe

Makes 1 serving


A poached egg on black beans.

Ingredients
140 grams cooked black beans
50 grams whole egg
90 grams romain lettuce
1 tbsp. chopped onion
1 tsp. garlic powder
1/2 tsp. pepper
2 tbsp. salsa
1/4 medium tomato
Directions
  1. Boil water.

  2. Sautee onions.

  3. Add garlic, beans, and pepper.

  4. Add 1 tbsp. water and cook on med/low for 5-10 minutes, stirring occasionally.

  5. Poach eggs for about five minutes.

  6. Place egg over beans and serve with shredded romain, salsa, and tomato.
