Black and White Pie Recipe

For a generous slice of pie(1/6)-only 85 calories. Exchange=1 Protein

Ingredients
1 c plain soy milk
1 envelope gelatin
3/4 c low fat cottage cheese
2 tsp vanilla extract
6 tsp splenda
4 tbsp unsweetened cocoa powder
2 egg whites
1/8 tsp salt
Directions
  1. Pour half the milk in a sauce pan (1/2 a cup). Sprinkle the gelatin over it. Soften 1 minute, then heat gently, stirring until the gelatin is completely dissolved.

  2. Place cottage cheese in blender. Cover and blend until completely smooth. Add gelatin misture, remaining milk and vanilla. Cover and blend until smooth. Put half ofthe mixture into a mixing bowl and set aside.

  3. To the remaining half of the misture in the blender, add 4 packets Splenda and cocoa. Blend thoroughly. Pour into a sprayed, 8-inch pie pan and chill until partially set (about 30 minutes).

  4. Beat egg whites and salt until stiff. Gradually beat in the remaining sweetener. Gently, but thoroughly, fold into the vanila half of the mixture. Spoon over chocolate layer and chill several hours until completely set.
