Cucumber, Tomato and Onion marinated in olive oil and vinegar
| 1 | cucumber |
| 1 | tomato |
| 1/2 | cup vinegar |
| 1/4 | cup olive oil |
| 1 | onion |
- peel and slice cucumber into medallions
- cut up tomato into halves or quarter medallions
- slice onion into half medallions
- add olive oil and vinegar and shake container
- allow to marinate and serve
