From Bob's Red Mill Corn Starch package.
| 1 1/3 | c sugar |
| 1/4 | c corn starch |
| 3 | eggs |
| 1/4 | c lemon juice |
| 1 | T lemon peel, grated |
| 1 | T margarine |
- Mix 1 cup sugar and corn starch in a pan and slowly add water.
- Separate eggs and stir egg yolks into sugar mixture.
- Stirring constantly, bring to a boil over medium heat; boil one minute
- Remove from heat and stir in lemon juice, peel and margarine/butter.
- Pour into a baked 9" pie crust.
- Beat egg whites with 1/3 cup sugar until stiff peaks form.
- Spread over lemon filling, sealing edges of pie crust.
- Bake at 350 for 10 minutes, until meringue is browned.
