Sweet Potato Chowder Recipe

Makes 4 servings


From Meatless Meals in 20 Minutes Use broth for better flavor Can add 8 oz can of corn for more nutrients

Ingredients
2 tbsp butter
1/2 cup onion
1/4 tsp cayenne pepper
2 cups sweet potatoes, cut into chunks
2 cups water
1/2 cup soymilk
1/4 tsp salt
Directions
  1. Melt butter in a medium saucepan over medium heat. Coarsely chop onion. Cook onion and cayenne papper in butter for 3 minutes, stirring occasionally.

  2. Add sweet potatoes and 1 cup of the water/broth. Cover and bring to a boil over high heat.

  3. Reduce heat to low and simmer until sweet potatoes are very tender.

  4. Transfer mixture to a food processor. Process until fairly smooth. Return to saucepan.

  5. Add remaining broth, soymilk, and salt. (Also corn if you are using). Cook, uncovered, for 1 to 2 minutes or until heated through, stirring constantly.
