Baked Eggplant Recipe

Makes 4 servings


Sautee veggies in oil, except tomatoes. Add seasonings, tomatoes and feta. Add to baking pan and cover. Bake at 350 for 20-30 minutes.

Ingredients
1 tbsp olive oil
1 large eggplant, peeled and chopped
1 small onion, chopped
1 zucchini, chopped
1 clove garlic, chopped
1 large tomato, chopped
1 tsp italian seasoning
1/2 cup feta cheese
