Oatmeal Blue-Berry Apple Cake Recipe

Vegan yummy cake,tweaked and ready to make, 10 minutes out of your life is worth making it and eating it guilt free :)

Ingredients
1 cup white flour
1/2 cup oatmeal
1/3 cup sugar
2 tsp baking powder
1/4 tsp salt
1/2 cup soy milk
1 red apple
1 tbsp cornstarch
1 cup blueberries
Directions
  1. Directions

  2. Preheat oven to 400 degrees F.

  3. In medium mixing bowl, combine flour, oats, vegan sugar, baking powder and salt. Â

  4. In another bowl, combine soy milk, applesauce and cornstarch. Â Pour this wet mixture into the dry mixture all at once. Â Stir until just moistened (batter will be lumpy). Â

  5. Fold in the blueberries( fresh or frozen) , spoon batter into a non-stick 8 x 8 baking pan. Â

  6. Bake 20 - 25 minutes, cool on rack 5 - 10 minutes, serve warm.
