Vegan yummy cake,tweaked and ready to make, 10 minutes out of your life is worth making it and eating it guilt free :)
| 1 | cup white flour |
| 1/2 | cup oatmeal |
| 1/3 | cup sugar |
| 2 | tsp baking powder |
| 1/4 | tsp salt |
| 1/2 | cup soy milk |
| 1 | red apple |
| 1 | tbsp cornstarch |
| 1 | cup blueberries |
- Directions
- Preheat oven to 400 degrees F.
- In medium mixing bowl, combine flour, oats, vegan sugar, baking powder and salt. Â
- In another bowl, combine soy milk, applesauce and cornstarch. Â Pour this wet mixture into the dry mixture all at once. Â Stir until just moistened (batter will be lumpy). Â
- Fold in the blueberries( fresh or frozen) , spoon batter into a non-stick 8 x 8 baking pan. Â
- Bake 20 - 25 minutes, cool on rack 5 - 10 minutes, serve warm.
