Use ripe but firm plum tomatoes. These can be served at room temperature as a side dish to grilled meat or fish.

| 2 | tsp extra virgin olive oil |
| 3 | tbsp sugar |
| 1 | salt and black pepper |
Cut the tomatoes in half lengthwise. Brush an oven dish with olive oil and place the tomatoes in it, cut side up. Sprinkle each with a little sugar, salt, and pepper and cook in a preheated 275 degree oven for 3 1/2 to 4 hours, until the tomatoes are shriveled and shrunken. Serve them cut side up on a flat serving platter.Categories
