White sauce
| 4 | ounces sweet butter |
| 1 | cup diced onion |
| 1/2 | cup flour |
| 4 | cups fat free milk, scalded |
| 1/4 | teaspoon nutmeg |
| 1 | salt |
| 1 | pepper |
In sauce pan, heat the butter, when hot add the onion and cook until translucent. Add the flour, mix well and add the hot milk, with a whisk working out the lumps. Cook at very low heat approx. 25-30 min. adding milk as needed. Adjust the seasoning with salt, pepper and nutmeg. StrainCategories
