Bechamel Recipe

White sauce

Ingredients
4 ounces sweet butter
1 cup diced onion
1/2 cup flour
4 cups fat free milk, scalded
1/4 teaspoon nutmeg
1 salt
1 pepper
Directions
In sauce pan, heat the butter, when hot add the onion and cook until translucent. Add the flour, mix well and add the hot milk, with a whisk working out the lumps. Cook at very low heat approx. 25-30 min. adding milk as needed. Adjust the seasoning with salt, pepper and nutmeg. Strain
