Veggie Soup Recipe

Soup

Ingredients
1 1/2 lbs potatoes
4 cups cabbage
1 cup onion
1 1/2 cups carrot
1 1/2 cups peas
1 1/2 cups lima beans
Directions
  1. Saute onion in a little butter.

  2. Add unpeeled roughly chopped potatoes (about 1 inch cubes)

  3. Add roughly chopped peeled carrots (.5" chunks)

  4. Stirring constantly allow to brown slightly

  5. Add about a pint of water, salt & pepper to taste

  6. Simmer for about 20 minutes, then add peas & beans, and simmer a further 5 minutes

  7. Add roughly shredded cabbage, and simmer until the cabbage is just done.

  8. Serve & enjoy
