Quick "Cream" of Broccoli/Mushroom Soup Recipe

Makes 2 servings


quick blender soup

Ingredients
3 cups fat free vegetable broth
1/4 tsp black pepper
1 small onion
1 cup broccoli
1/2 cup mushrooms
Directions
  1. Simmer 1.5 cups of broth in small pot.

  2. Add chopped onion, sliced mushrooms and pepper. Simmer until onions and mushrooms are soft.

  3. Add chopped broccoli and cover, adding a bit more broth. Cook until broccoli at desired tenderness.

  4. Let cool before adding to blender. Pulse and add remaining broth. Salt to taste if needed.
