quick blender soup
| 3 | cups fat free vegetable broth |
| 1/4 | tsp black pepper |
| 1 | small onion |
| 1 | cup broccoli |
| 1/2 | cup mushrooms |
- Simmer 1.5 cups of broth in small pot.
- Add chopped onion, sliced mushrooms and pepper. Simmer until onions and mushrooms are soft.
- Add chopped broccoli and cover, adding a bit more broth. Cook until broccoli at desired tenderness.
- Let cool before adding to blender. Pulse and add remaining broth. Salt to taste if needed.
