Tabbouleh Recipe

Makes 12 servings


Light, delicious salad.

Ingredients
1 cup bulgur
1 2/3 cups boiling water
1/3 cup olive oil
1/3 cup lemon juice
1 cup green onions
1 cup chopped fresh parsley
1/4 cup chopped fresh mint
3 large tomatoes
1 large cucumber
1 teaspoon salt
1 Ground black pepper to taste
Directions
  1. Combine bulgur and boiling water in a bowl. Cover and allow to soak for one hour.

  2. Chop tomatoes. Peel cucumber and seed cucumber, then chop. Finely chop green onions, parsley, and mint.

  3. Uncover bulgur and add oil, onions, parsley, mint, tomatoes, and cucumber. Toss to combine.

  4. Season to taste with salt and pepper.
