| 1 | cup bulgur |
| 1 2/3 | cups boiling water |
| 1/3 | cup olive oil |
| 1/3 | cup lemon juice |
| 1 | cup green onions |
| 1 | cup chopped fresh parsley |
| 1/4 | cup chopped fresh mint |
| 3 | large tomatoes |
| 1 | large cucumber |
| 1 | teaspoon salt |
| 1 | Ground black pepper to taste |
- Combine bulgur and boiling water in a bowl. Cover and allow to soak for one hour.
- Chop tomatoes. Peel cucumber and seed cucumber, then chop. Finely chop green onions, parsley, and mint.
- Uncover bulgur and add oil, onions, parsley, mint, tomatoes, and cucumber. Toss to combine.
- Season to taste with salt and pepper.
