Scallop Pad Thai Recipe

Quick and easy Scallop Pad Thai

Ingredients
8 ounces rice noodles
3/4 cup warm water
1/4 cup fish sauce
1/4 cup lime juice
1/4 cup dark brown sugar
2 tbsp peanut oil
16 oz sea scallops
4 garlic cloves, minced
1 cup bean sprouts
2 tablespoon peanut butter
2 tablespoon chopped scallions
Directions
  1. Cover rice noodles with hot water in large bowl and soak until softened but not fully tender, about 20 minutes.

  2. Drain noodles. Whisk 3/4 cup warm water, fish sauce, lime juice, and sugar in bowl until sugar is dissolved.

  3. Heat oil in large nonstick skillet over high heat until just smoking.

  4. Add scallops and garlic and cook until lightly browned and fragrant, about 2 minutes.

  5. Add noodles and fish sauce mixture and cook until noodles are coated with sauce, about 3 minutes.

  6. Add bean sprouts and continue to cook, stirring continuously, until noodles are fully tender, about 3 minutes.
