Mediterranean Vegetable Stew Recipe

Nice vegetarian stew

Ingredients
1 eggplant, sliced
2 courgettes, sliced and diced
1 large onion, sliced and diced
2 cloves garlic, crushed
4 large tomatoes, diced
1 red pepper, sliced
1 yellow pepper, sliced
250 ml white wine
Directions
  1. Slice aubergine, sprinkle with salt, and weigh down to extract bitter juices. Rinse well and dice.

  2. Fry courgette with aubergine. Remove and drain.

  3. Fry onions, garlic, tomato and peppers.

  4. Add wine, courgettes and aubergine. Simmer down until vegetables are tender.
