Nice vegetarian stew
| 1 | eggplant, sliced |
| 2 | courgettes, sliced and diced |
| 1 | large onion, sliced and diced |
| 2 | cloves garlic, crushed |
| 4 | large tomatoes, diced |
| 1 | red pepper, sliced |
| 1 | yellow pepper, sliced |
| 250 | ml white wine |
- Slice aubergine, sprinkle with salt, and weigh down to extract bitter juices. Rinse well and dice.
- Fry courgette with aubergine. Remove and drain.
- Fry onions, garlic, tomato and peppers.
- Add wine, courgettes and aubergine. Simmer down until vegetables are tender.
