Lovely, spicy, fruity, another family favourite.
| 24 | oz pork chops, boneless |
| 4 | slices of pineapple, cut into 1cm cubes |
| 1 | black pepper |
| 1 | red pepper, cut into 1cm cubes |
| 1 | tsp sambal oelek |
| 1 | tbsp lime juice |
| 1 | tsp honey, runny - for the Sambal |
| 1 | tsp garlic, chopped |
| 1 | tsp ground cumin |
| 1 | tsp ground coriander |
| 1/2 | tsp chili powder |
| 1/2 | tsp turmeric |
| 4 | tbsp extra virgin olive oil |
| 1 | tbsp lime juice, - for the marinade |
- Make a paste by mixing together all the marinade ingredients. Rub the paste onto the pork and leave to marinate for a couple of hours.
- For the sambal, mix all the sambal ingredients together and leave for half an hour to let the flavours infuse.
- Heat a griddle pan until hot, add the pork and griddle on each side for 4-5 minutes. Serve with a leafy green salad and a generous portion of the sambal.
