Childhood favorite, all-in-one skillet. Takes about 45 minutes start to finish. Originally from Uncle Ben's cookbook.
| 1 | lb ground beef, lean |
| 1 | cup converted rice |
| 2 1/4 | cups water |
| 3 | tsp beef bouillon |
| 1 | green pepper, chopped |
| 14 | oz tomatoes, diced |
| 1 | onion, medium, chopped |
| 1 | cup monterey jack cheese, shredded |
- Brown beef in large skillet with onion.
- Add rice, water, and bouillon and bring to boil.
- Cover and simmer over low heat for 20 minutes.
- Add green pepper and tomatoes and heat through.
- Top with shredded cheese; melt.
- Serves 4, more or less.
