California Beef Rice Recipe

Makes 4 servings


Childhood favorite, all-in-one skillet. Takes about 45 minutes start to finish. Originally from Uncle Ben's cookbook.

Ingredients
1 lb ground beef, lean
1 cup converted rice
2 1/4 cups water
3 tsp beef bouillon
1 green pepper, chopped
14 oz tomatoes, diced
1 onion, medium, chopped
1 cup monterey jack cheese, shredded
Directions
  1. Brown beef in large skillet with onion.

  2. Add rice, water, and bouillon and bring to boil.

  3. Cover and simmer over low heat for 20 minutes.

  4. Add green pepper and tomatoes and heat through.

  5. Top with shredded cheese; melt.

  6. Serves 4, more or less.
