Mexican Chicken Recipe

Ideal to put on wraps with salsa and probably much lower in calories than the 244 kcal fajita sauce I am using tonight....

Ingredients
1 lb chicken breast, cut into strips
1/2 tsp. dried chilies
1 tsp. paprika
1 tsp. cumin
1 tsp. dried oregano
2 tbsp lime juice
1 tsp red wine vinegar
1 red pepper, sliced
1 green pepper, sliced
1 yellow pepper, sliced
1 red onion, sliced
Directions
  1. Combine the spices and seasonings in a bowl.

  2. Add the chicken and marinate for an hour. Heat spray oil in a frying pan or wok over a medium heat, saute the chicken for about 10 minutes.

  3. If chicken starts to stick add some water to the pan.

  4. Add the sliced peppers and onions and cook for a further 5 minutes.
