Made these bars for my work, and they really liked them. I would suggest using less sugar in the lemon filling and a touch more flour as they came out kinda liquidy.
| 8 | tbs |
| 1 | cups all purpose flour |
| 1/2 | cup powdered sugar |
| 2 | eggs |
| 1 | cups sugar |
| 4 | tbs all purpose flour |
| 1/8 | cup lemon juice |
| 1 | tablespoon finely grated lemon peel |
| 1 | tbs powdered sugar |
- Make the base of flour, butter, 1/2 c sugar. Press into a 8x8 pan
- Bake at 325 20 mins
- Make the filling with the other ingredients
- Pour over the base and bake 25 mins
- Sift a lil powdered sugar over the top
- Voila!
