Greek Yogurt Salad Dressing Recipe

Makes 4 servings


This is a tart, tangy dressing for lettuce and other greens. Try it over endive. Option: Sprinkle with 2 ounces of blue cheese (this will increase the fat content considerably and lower the grade to a B-!)

Ingredients
1 cup yogurt, low fat, plain
1 teaspoon vinegar
1 garlic clove
1/2 teaspoon dry mustard
1/2 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon sugar
1 pepper to taste
Directions
Blend ingredients together. Let stand 1 hour before serving. Keep refrigerated. Use on any leafy fresh vegetable, endive, or cooked vegetable.
