Spinach Soup Recipe

Makes 4 servings


Spinach Soup

Ingredients
1 tsp olive oil
5 cloves garlic
1 kg spinach
4 cups water
1/2 cup Milk, Lowfat, Fluid, 1% Milkfat
Directions
  1. In a big pot, warm the olive oil and cook garlic.

  2. Add boiling water

  3. Put in spinach on high heat and let simmer until leaves are tender

  4. Put heat down, add milk. Then put in blender to make a cream texture. You can make it more or less creamy to taste.

  5. Let simmer for another 30min on low heat.

  6. Add pepper to taste and serve warm. This is a good soup to make and put it the fridge when you need to preprare meal in advance.
