| 1 | tsp salt |
| 1 | tsp dry mustard |
| 1 | tsp dried thyme |
| 1/2 | tsp ground black pepper |
| 24 | ounce salmon fillets |
| 2 | tsp honey |
| 3 | tsp extra virgin olive oil, divided |
| 8 | cups baby spinach leaves |
| 1/2 | tsp garlic, minced |
| 2 | cups red seedless grapes, halved |
| 1/2 | cup red wine |
- Preheat oven to 300 degrees.
- Combine salt, mustard, thyme and pepper; mix well. Rub salmon fillets with the honey and sprinkle with 1/2 of the seasoning mixture.
- Heat 2 tsp olive oil in a non-stick skillet. Brown both sides of salmon fillets and remove from pan.
- Toss spinach and garlic with 1 tsp olive oil in a 13x9x2 inch baking dish. Place salmon over spinach, cover loosely with foil, and bake at 300 degrees for 10 minutes.
- While salmon in baking, saute grapes in the same skillet used to brown the salmon. Add wine and bring to a boil, season with remaining seasoning mixture to taste, and reduce in half. Serve salmon on spinach topped with grape sauce.
