Healthy Vegie Medily For Quick Main Mean (Chicken / Pork) Recipe

Makes 1 serving
Vegies to Mix With Chicken Breast or Boneless Pork Chop for a fast and healthy meal
| 1/2 | cup carrots |
| 1/2 | cup onion chopped |
| 1/2 | cup zucchini |
| 1/2 | cup broccoli |
| 1 | small red potato |
| 1 | tsp olive oil |
- Cut carrots and potato into slices and microwave for 7 min.
- Meanwhile, toss onion, zucchini, broccoli and olive oil in pan.
- Add either a small skinless, boneless chicken breast or lean pork chop w/out the bone and cook over medium heat.
- Drain the potatoes and carrots. Make room in the pan for the potatoes so they can brown slightly. Toss in the carrots.
- Cook until meat is cooked through and potatoes are slightly browned, (about 2-3 min. more)
- Very good for you, yummy too!
