Artichoke Tomato Salad Recipe

greek inspired summer salad

Ingredients
7 1/2 oz Artichoke Hearts
1 cup cherry tomatoes
8 oz fresh mozzarella
2 tsp oregano
3 tbsp balsamic vinegar
3 tbsp extra virgin olive oil
1 salt and pepper
1/2 tsp thyme
Directions
  1. ignore the last five ingredients. Just buy pre-marinated artichoke hearts.

  2. pour entire jar of artichoke hearts in your mixing bowl.

  3. Cut the hearts in half.

  4. Wash and add your tomatoes. Cut any in half that are too big to comfortably fit in your mouth.

  5. Drain your fresh mozzarella balls, and add them to your salad.

  6. Mix all together. The marinade from the artichokes is very good and acts like a dressing for this salad.
