greek inspired summer salad
| 7 1/2 | oz Artichoke Hearts |
| 1 | cup cherry tomatoes |
| 8 | oz fresh mozzarella |
| 2 | tsp oregano |
| 3 | tbsp balsamic vinegar |
| 3 | tbsp extra virgin olive oil |
| 1 | salt and pepper |
| 1/2 | tsp thyme |
- ignore the last five ingredients. Just buy pre-marinated artichoke hearts.
- pour entire jar of artichoke hearts in your mixing bowl.
- Cut the hearts in half.
- Wash and add your tomatoes. Cut any in half that are too big to comfortably fit in your mouth.
- Drain your fresh mozzarella balls, and add them to your salad.
- Mix all together. The marinade from the artichokes is very good and acts like a dressing for this salad.
