Old English Fruit Cake (Dark) Recipe

Got this from a dear friend of mine. She made the loaf, and her mother actually got the recipe from a magazine about 40+ years ago. Great fruit cake...

Ingredients
1/2 cup Butter
1/2 cup Brown Sugar
3 Eggs
1 cups Flour
1/2 tsp cinnamon
1/2 tsp mace
1/2 tsp cloves
1/4 tsp allspice
1/4 tsp nutmeg
1/4 tsp salt
1/2 cup raisins
1/4 cup
6 pieces
1/4 cup
1/4 cup
1/4 cup
1/4 cup walnut pieces
1 shot
1/8 cup coffee
1 tsp orange zest
1/8 cup orange juice
1 tsp lemon zest
Directions
  1. Cream butter & sugars. Add egg yolks, stir vigorously.

  2. Sift flour & then sift again w/ spices.

  3. Combine all the fruits & nuts with 1/4 the flour mixture.

  4. Add remaining flour to butter mixture & alternating with rum, coffee, and zest/juices.

  5. Add the nut/fruit mix to the batter.

  6. Beat egg whites to stiff peaks & fold into the batter.

  7. Butter a loaf pan & line with brown paper & butter again.

  8. Bake in a slow oven at 250 for 3 hours or until toothpick comes out clean. Make sure to have a shallow pan of water at the bottom rack of the oven whilest baking.

  9. Set cake on wire rack to cool.

  10. Wrap the cake in a cheesecloth moistened in brnady/rum. Wrap in 2 layers of foil. Age at least 1 month.

  11. Chill before slicing & enjoy!
