Scone Vegetable Pizza Recipe

Makes 4 servings


Scone based pizza

Ingredients
8 oz self raising flour
1 teaspoon baking powder
1 oz margarine
1 egg
5 fl oz semi skimmed milk
400 g canned tomatoes
2 cloves garlic
4 oz cheddar cheese
4 mushrooms
1 red pepper
1 onion
Directions
  1. Sieve flour and baking powder into bowl.

  2. Rub in margarine.

  3. Add beaten egg.

  4. Add milk to mix to stiff dough (scone dough).

  5. Roll out and put in pizza tin.

  6. Put tomatoes, onion, crushed garlic in pan and simmer for 15 minutes.

  7. Drain through sieve to remove excess juice.

  8. Cover dough with mixture.

  9. Top with vegetables and cheese.

  10. Bake gas mark 5 for approximately 20 minutes.
