Chicken in Black Bean Sauce Recipe

Makes 4 servings


Tasty chicken in black bean sauce.

Ingredients
300 grams chicken, cooked
1 cup black beans, dry
2 cups water (from cooked black beans)
150 grams tomato, diced
150 grams onion, diced
1/4 cup cilantro, minced
1/2 tsp salt
1 tbsp olive oil
1 tsp cumin
Directions
  1. Bake or roast chicken breasts.

  2. Soak black beans over night. Pour off water and replace at least 2 times.

  3. Cook beans in crock pot until tender. Keep liquid.

  4. Pour beans into food processor and add 2 cups juice. Puree. Pour back into crock pot or pan.

  5. Add remaining ingredients except for cilantro. Bring to a boil.

  6. Reduce heat and simmer 10-20 minutes depending on how long it takes for onion to turn clear.

  7. Pour over chicken and enjoy. Refrigerate to keep. Keeps approximately 2 days.
