| 1 | tbsp. olive oil |
| 1 | onion, chopped |
| 1/2 | cup carrots, chopped |
| 3 | cloves garlic, minced |
| 14 1/2 | ounce diced tomatoes |
| 1 | cup chicken broth |
| 1/2 | cup water |
| 1/2 | cup lentils, dry |
| 1 | tsp curry powder |
- Heat olive oil in saucepan over medium high heat. Add onions, carrots, and garlic. Cook until onions begin to soften. Add rest of ingredients.
- When mixture comes to a boil, cover and reduce heat. Simmer, stirring occasionally, for about 40 minutes. Add water or broth as needed if mixture starts to become too dry.
