Curried Tomato & Lentil Stew Recipe

Full of fiber, protein, and taste!

Ingredients
1 tbsp. olive oil
1 onion, chopped
1/2 cup carrots, chopped
3 cloves garlic, minced
14 1/2 ounce diced tomatoes
1 cup chicken broth
1/2 cup water
1/2 cup lentils, dry
1 tsp curry powder
Directions
  1. Heat olive oil in saucepan over medium high heat. Add onions, carrots, and garlic. Cook until onions begin to soften. Add rest of ingredients.

  2. When mixture comes to a boil, cover and reduce heat. Simmer, stirring occasionally, for about 40 minutes. Add water or broth as needed if mixture starts to become too dry.
