This is a great breakfast for me. High fiber, relatively high in protein, and most of that is from vegetable sources. Low cholesterol, low sodium... need I go on?
| 1/2 | cup organic rolled oats |
| 1 | cup water |
| 1 | tbsp pecans, chopped |
| 2 | tbsp raisins or dried cranberries |
| 1 | packet Splenda |
| 1/8 | tsp cinnamon, ground |
| 1 | tbsp organic half and half |
- Combine oats and water in a microwave safe dish. Microwave at 80% power for 2 minutes; stir.
- Add pecans and raisins to oats; stir and return to microwave, 1 minute or until cooked down.
- Remove from microwave. Add Splenda, cinnamon (or any other spices) and stir. Drizzle with half and half, if desired.
