Makes 1 serving

This is a great breakfast for me. High fiber, relatively high in protein, and most of that is from vegetable sources. Low cholesterol, low sodium... need I go on?

Ingredients
1/2 cup organic rolled oats
1 cup water
1 tbsp pecans, chopped
2 tbsp raisins or dried cranberries
1 packet Splenda
1/8 tsp cinnamon, ground
1 tbsp organic half and half
Directions
  1. Combine oats and water in a microwave safe dish. Microwave at 80% power for 2 minutes; stir.

  2. Add pecans and raisins to oats; stir and return to microwave, 1 minute or until cooked down.

  3. Remove from microwave. Add Splenda, cinnamon (or any other spices) and stir. Drizzle with half and half, if desired.
