Vegetarian Chili Recipe

Makes 18 servings


Hearty healthy meal.

Ingredients
2 T olive oil
3 tbsp garlic
1/2 cup red onion
1 zucchini
1 yellow squash
15 oz. black beans
15 oz. white beans
15 oz. kidney beans
12 oz. diced tomatoes
1 can tomato paste
16 oz. frozen corn
1 quart vegetable broth
1/2 cup salsa
1/3 cup chili powder
2 tsp cumin
1 tsp paprika
Directions
  1. Saute garlic and onion in olive oil in the bottom of large pot

  2. Add squash and zucchini

  3. Add beans, broth, diced tomatoes, tomato paste and corn

  4. Add spices and salsa

  5. Bring to boil, then simmer for about 30 minutes
