Salmon Crunch Pie Recipe

From "Manna From Heaven"

Ingredients
1 1/2 c whole wheat flour
1 1/2 c sharp cheddar cheese, shredded
1/2 tsp salt
1/2 tsp paprika
1/2 c butter
15 oz red salmon, canned
3 eggs, beaten
1 c sour cream
1/2 c mayonnaise
1 tbsp onion, grated
1/8 tsp hot sauce
1/4 tsp dill weed
Directions
  1. Preheat oven to 400 degrees.

  2. To make crust:

  3. Combine flour, 1 cup cheese, salt, and paprika in food processor.

  4. Cut in butter until mixture resembles coarse crumbs.

  5. (Optional: Add 1/3 c. almonds)

  6. Save 1 cup crumb mixture for topping.

  7. Press remaining mixture into 9-inch pie plate.

  8. To make Salmon mixture:

  9. Drain, remove bones, and flake salmon, reserving liquid.

  10. Add to salmon: reserved liquid, eggs, sour cream, cheese, mayonnaise, and seasonings (3 drops of hot pepper sauce is sufficient).

  11. Mix thoroughly.

  12. Turn into pie plate lined with crust.

  13. Sprinkle with reserved crumbs.

  14. Bake 45 minutes.
