Ingredients

tbsp smart balance butter |
| 1/4 |
cup white sugar |
| 1 |
egg |
| 6 |
oz fat free yogurt |
| 1 |
tsp fresh lemon juice |
| 1/2 |
tsp grated lemon zest |
| 2 |
cups white whole wheat flour |
| 1/4 |
tsp baking soda |
| 1/8 |
tsp salt |
| 1/2 |
tsp cinnamon |
| 1/8 |
tsp ground ginger |
| 1/8 |
tsp ground nutmeg |
| 1 1/2 |
tbsp powder sugar |
| 1 |
tbsp fresh lemon juice |
Directions
- Preheat oven to 400 degrees. Spray muffin pan or line with paper
- Combine melted butter with sugar in a large bowl. Add ingredients egg through lemon zest to butter and sugar mixture, mix well.
- In med. bowl combine flour through nutmeg, mix well. Add to lemon mixture.
- Bake for 15 mins. Remove and cool.
- Mix lemon juice and powder sugar. Drizzle over cooled muffins. Store in fridge.
