Lemon Blueberry Muffins

Makes 12 servings

Low Fat/Cal Muffins

Ingredients
2 tbsp smart balance butter
1/4 cup white sugar
1 egg
6 oz fat free yogurt
1 tsp fresh lemon juice
1/2 tsp grated lemon zest
2 cups white whole wheat flour
1/4 tsp baking soda
1/8 tsp salt
1/2 tsp cinnamon
1/8 tsp ground ginger
1/8 tsp ground nutmeg
1 1/2 tbsp powder sugar
1 tbsp fresh lemon juice
Directions
  1. Preheat oven to 400 degrees. Spray muffin pan or line with paper

  2. Combine melted butter with sugar in a large bowl. Add ingredients egg through lemon zest to butter and sugar mixture, mix well.

  3. In med. bowl combine flour through nutmeg, mix well. Add to lemon mixture.

  4. Bake for 15 mins. Remove and cool.

  5. Mix lemon juice and powder sugar. Drizzle over cooled muffins. Store in fridge.
