Sweet Potato: Bourbon Casserole Recipe

Ingredients
3 pounds sweet potatoes
1/2 cup firmly packed brown sugar
1/2 cup butter
1/3 cup orange juice
1/4 cup bourbon
1/2 teaspoon salt
1/2 teaspoon pumpkin pie spice
2 ounces miniature marshmallows
Directions
  1. Cook sweet potatoes in boiling water to cover 30 minutes or until tender.

  2. Drain. Let cool to touch; peel and mash potatoes.

  3. Combine mashed sweet potato, brown sugar, and next 5 ingredients in a large mixing bowl; beat at medium speed of an electric mixer until smooth.

  4. Spoon mixture into a lightly greased 1 1/2-quart casserole.

  5. Bake at 350° for 30 minutes or until thoroughly heated.

  6. Sprinkle with marshmallows and bake 5 additional minutes or until marshmallows are golden.
