Melon and Cucumbers with Pepper and Lime Salad Recipe

Another crazy Clarecipe! (Apparently nicked from Deborah Madison.) It's probably best to substitute honeydew or cantaloupe for the watermelon, but watermelon is what I have, so watermelon is what I'll use!

Ingredients
1/4 watermelon
3 cucumbers
2 cups arugula leaves
1 teaspoon grated or minced lime zest
2 tbsp fresh lime juice
2 pinches salt
1 pinch pepper
5 tbsp extra virgin olive oil
2 scallions, including an inch of the greens, thinly sliced into rounds
2 tbsp chopped mint
Directions
  1. Scoop out the seeds, then slice the melon into narrow wedges and remove the skin.

  2. Scrub the cucumbers or peel if the skin is thick; cut into sixths.

  3. Make a bed of greens on four plates and arrange the melon and cucumbers on top.

  4. To make dressing mix lime zest, lime juice, salt, oil, scallions, and mint.

  5. Spoon the dressing over the top and season with a little salt & pepper.
