Another crazy Clarecipe! (Apparently nicked from Deborah Madison.) It's probably best to substitute honeydew or cantaloupe for the watermelon, but watermelon is what I have, so watermelon is what I'll use!
| 1/4 | watermelon |
| 3 | cucumbers |
| 2 | cups arugula leaves |
| 1 | teaspoon grated or minced lime zest |
| 2 | tbsp fresh lime juice |
| 2 | pinches salt |
| 1 | pinch pepper |
| 5 | tbsp extra virgin olive oil |
| 2 | scallions, including an inch of the greens, thinly sliced into rounds |
| 2 | tbsp chopped mint |
- Scoop out the seeds, then slice the melon into narrow wedges and remove the skin.
- Scrub the cucumbers or peel if the skin is thick; cut into sixths.
- Make a bed of greens on four plates and arrange the melon and cucumbers on top.
- To make dressing mix lime zest, lime juice, salt, oil, scallions, and mint.
- Spoon the dressing over the top and season with a little salt & pepper.
