Asian inspired recipe, sweet and tangy sauce great for a relaxing dinner.
| 8 | oz boneless, skinless chicken breasts |
| 16 | oz pineapple rings |
| 1/2 | cup canned mandarin oranges |
| 1/2 | cup frozen peas |
| 2 | stalks celery |
| 1 | cup water |
| 1 | tbs soy sauce |
| 1 | pinch of ginger |
| 3 | cups white rice, cooked |
| 1 | tbs corn starch |
| 1/2 | cup cold water |
- Prepare rice as directed while cooking the chicken.
- Simmer chicken breasts in pineapple juice until tender.
- Remove chicken and slice into bite size pieces.
- Add fruit and vegetables, water and soy sauce to pineapple juice. Bring to a boil. Add chicken back in and sprinkle ginger over ingredients.
- In a cup, stir cornstarch and cold water together until smooth. Add to chicken mixture and store thoroughly.
- Simmer for 20 minutes.
- Serve hot with rice.
