Sugar snap peas with mint and orange

Makes 6 servings

Refreshing twist on snap peas!

Ingredients
12 ounces sugar snap peas, trimmed (about 3 1/2 cups)
2 tablespoons butter (1/4 stick)
1 tablespoon water
1 1/2 tablespoons fresh mint leaves, thinly sliced
1/2 teaspoon orange peel, zested
1 pinch salt
1 pinch pepper
Directions
  1. Cook peas in large saucepan of boiling salted water for 2 minutes; drain. (Can be made 2 hours ahead.)

  2. Let stand at room temperature.

  3. Melt butter in medium skillet over medium-high heat.

  4. Whisk in 1 tablespoon water.

  5. Stir in mint and orange peel; add sugar snap peas and sauté just until heated through, about 1 minute.

  6. Season with salt and pepper.

  7. Transfer to bowl and serve.
