Directions
- Mix together the wet & dry ingredients in separate bowls. Allow the yeast packet to dissolve in warm water for about 5-10 mins. Mix in with the flour first, then add wet ingredients and layer wet and dry. Mix well & add raisins & Carrots (I like to put the carrots in a food processor until it's nearly pulpy but you can do this however you like). Mix well.
- Preheat the oven to 350.
- Knead the bread on a floured countertop for 3 mins (NO MORE!! Over kneading will leave you with a stiff bread!)
- Place in a bowl and cover to let rise for 45-60 mins
- Punch down
- Roll out flat & thin like you're making cookies
- Sprinkle with cinnamon, brown sugar and/or extra raisins
- Cut the dough in two pieces
- Roll up each piece into a long tube
- Tuck the sides under and plop it in the bread pan (I like glass pans sprayed with PAM)
- Let it rise for another 15-20 mins in the pan
- Bake it for 45-60 mins :)
- The last 20 minutes you can brush the top of the loaf with butter, orange juice, carrot juice, egg wash, and/or brown sugar/cinnamon blend for a nice top depending on the type of loaf you are going for.
