Lemon Green Beans

Fresh citrus twist on traditional green beans

Ingredients
1/2 lb green beans
1 tsp lemon juice
1/2 tsp lemon zest
1 tsp italian parsley
1 pinch black pepper
Directions
  1. Trim regular green beans if using and in a large saucepan of boiling salted water cook beans until crisp-tender (2 minutes for haricots verts or 3 to 4 minutes for regular green beans.

  2. Drain in a colander.

  3. In a bowl toss beans with lemon juice, parsley, lemon zest, and pepper and season with salt.
