The healthy alternative to fried eggrolls!
| 6 | cups cabbage, shredded |
| 1 | carrot, shredded |
| 2 | celery stalk, diced |
| 2 | tablespoons chopped onion |
| 1/4 | cup chopped green onion |
| 1 | lb ground turkey |
| 1 | salt to taste |
| 1 | tbsp ground ginger |
| 2 | cloves garlic (crushed) |
| 1 | black pepper to taste |
| 1/2 | cup egg beaters |
| 20 | egg roll wrappers |
- Begin by chopping all of your vegetables. Make sure that you chop everything very fine, a food processor works great!
- Combine ground turkey, onions, and a little sesame oil in a large skillet. Cook meat ans onions until you see no more pink. Remove from the skillet and combine with the vegetable mixture.
- Cook egg beaters in skillet set on medium heat. When cooked thoroughly, dice up and add to vegi and meat mixture.
- On a clean surface, stuff the eggroll according to the directions on the package. Place on lightly oiled pan and bake at 450 for 5 minutes on each side. Serve with sweet chili sauce. Yummo!!!!
