Use either a lg bread machine, or 2 reg. loaf pans in the oven for this bread.
| 1 1/2 | c whole wheat flour |
| 1 1/2 | c bread flour |
| 1 | c wheat bran |
| 3 | T yeast |
| 1 1/2 | t salt |
| 2 | T sugar |
| 1 | T olive oil |
| 4 | oz pitted green olives |
| 4 | oz kalamata olives |
| 1/2 | t basil |
| 1/2 | t oregano |
| 1 1/4 | c water |
- Use bread machine directions if preparing in machine -- add olives at add-in stage, or combine from the beginning. The olives will usually disappear if added at the beginning of mixing. I you are preparing this dough by hand, chop the olives, and add them in the last knead.
- I usually substitue about 2 T of the olive brine for 2 T of water.
- Adjust liquid for your bread machine norm, and to your altitude. Bake on dark setting.
