Olive Bread (Bread Machine) Recipe

Makes 14 servings


Use either a lg bread machine, or 2 reg. loaf pans in the oven for this bread.

Ingredients
1 1/2 c whole wheat flour
1 1/2 c bread flour
1 c wheat bran
3 T yeast
1 1/2 t salt
2 T sugar
1 T olive oil
4 oz pitted green olives
4 oz kalamata olives
1/2 t basil
1/2 t oregano
1 1/4 c water
Directions
  1. Use bread machine directions if preparing in machine -- add olives at add-in stage, or combine from the beginning. The olives will usually disappear if added at the beginning of mixing. I you are preparing this dough by hand, chop the olives, and add them in the last knead.

  2. I usually substitue about 2 T of the olive brine for 2 T of water.

  3. Adjust liquid for your bread machine norm, and to your altitude. Bake on dark setting.
