Chicken Casserole Recipe

Makes 8 servings


Easy and freezable family dinner

Ingredients
18 ounces chicken thighs, boneless skinless
10 ounces cream of mushroom soup
10 ounces noodles, egg
8 ounces mixed vegetables
14 ounces tomatoes, italian diced
4 ounces mushrooms, baby portabella
1 tblsp oregano
1 tblsp basil
Directions
  1. Boil chicken til tender, remove and shred. Cook noodles and vegetables in broth left from chicken. Drain, and mix all ingredients together in large pan. Optional: Pour into 9x13 baking dish and cover. Bake at 350 about 20 minutes. Serve. (For those not trying to lose weight, topping individual portions with cheese is an excellent addition.)

  2. This can also be frozen in aluminum baking pans for a quick dinner at a later date.
