Cajun Haddock Spicy Fish
| 1/2 | tsp dried oregano |
| 1/2 | tsp cayenne pepper |
| 1/2 | tsp paprika |
| 1/2 | tsp black pepper |
| 1/2 | tsp thyme |
| 32 | ounce haddock fillets |
| 2 | tbsp olive oil |
- In a small bowl combine oregano, cayenne pepper, paprika, black pepper and thyme. Sprinkle over 1 side of the fillets and rub in with your fingers.
- Preheat oven to 400ºF.
- In a large oven proof skillet, heat oil over medium heat. Cook the fillets, spice side down, until browned, about 2 minutes. With large spatula, turn the fillets.
- Place skillet in the preheated oven and bake until the fish flakes easily when tested with a fork, about 5 minutes.
