Blueberry Oatmeal Muffins

Makes 18 servings

Blueberry Oatmeal Muffins for breakfast or snacks

Ingredients
3/4 c. old-fashioned oatmeal
1/2 c. flour
1/2 c. whole wheat flour
1/4 c. bran
1/2 c. light brown sugar
1 1/2 tsp. baking soda
1/4 tsp. salt
1/4 c. applesauce
1 c. grated zucchini
1 egg
3/4 c. buttermilk
1/2 c. chopped nuts
3/4 c. blueberries

Topping:
2 tbsp. sugar
2 tsp. cinnamon
Directions
  1. Preheat oven to 425 degrees.

  2. Mix together first 8 ingredients until crumbly, then add egg, buttermilk, nuts and berries.

  3. Mix well.

  4. Pour into greased muffin tins.

  5. Combine ingredients for topping.

  6. Mix with fingers and sprinkle over the muffins.

  7. Bake about 15 minutes.
