Blueberry Oatmeal Muffins for breakfast or snacks

Ingredients

c. old-fashioned oatmeal |
| 1/2 |
c. flour |
| 1/2 |
c. whole wheat flour |
| 1/4 |
c. bran |
| 1/2 |
c. light brown sugar |
| 1 1/2 |
tsp. baking soda |
| 1/4 |
tsp. salt |
| 1/4 |
c. applesauce |
| 1 |
c. grated zucchini |
| 1 |
egg |
| 3/4 |
c. buttermilk |
| 1/2 |
c. chopped nuts |
| 3/4 |
c. blueberries |
Topping: |
| 2 |
tbsp. sugar |
| 2 |
tsp. cinnamon |
Directions
- Preheat oven to 425 degrees.
- Mix together first 8 ingredients until crumbly, then add egg, buttermilk, nuts and berries.
- Mix well.
- Pour into greased muffin tins.
- Combine ingredients for topping.
- Mix with fingers and sprinkle over the muffins.
- Bake about 15 minutes.
