Garlicky Vermicelli

Makes 4 servings

Almost a noodle stew, fideo noodles can be used instead of vermicelli.

Ingredients
1/4 cup extra virgin olive oil
1/2 lb vermicelli
1 tbsp garlic
1 pinch salt
1 pinch pepper
5 cups stock
1 cup parmesan cheese
1/2 cup parsley
Directions
  1. break vermicelli into small pieces

  2. mince garlic

  3. grate parmesan cheese

  4. chop parsley leaves

  5. heat oil in deep skillet or pot over medium-high heat

  6. add pasta, garlic, salt, and pepper

  7. stir until brown

  8. stir in vegetable stock and simmer until reduced (add more if noodles get dry)

  9. sprinkle parmesan and parsley on top
