Almost a noodle stew, fideo noodles can be used instead of vermicelli.

Ingredients
| 1/4 |
cup extra virgin olive oil |
| 1/2 |
lb vermicelli |
| 1 |
tbsp garlic |
| 1 |
pinch salt |
| 1 |
pinch pepper |
| 5 |
cups stock |
| 1 |
cup parmesan cheese |
| 1/2 |
cup parsley |
Directions
- break vermicelli into small pieces
- mince garlic
- grate parmesan cheese
- chop parsley leaves
- heat oil in deep skillet or pot over medium-high heat
- add pasta, garlic, salt, and pepper
- stir until brown
- stir in vegetable stock and simmer until reduced (add more if noodles get dry)
- sprinkle parmesan and parsley on top
