Weirdo Wanna Be Thai Curry Fusion Soup

Makes 2 servings

Funky soup in a clear broth. Caution: Almost zero salt and fat.

Ingredients
4 cups water (just enough to barely cover vegetables)
75 grams tofu, extra firm, cubed
250 grams mushrooms, sliced
160 grams onion, sliced
80 grams tomato, wedged
85 grams pineapple, fresh, wedged
1 tbsp lime juice
1/2 tsp garlic
2 pinches turmeric
2 pinches mace
1 gram Cardamom (about 3 pods)
1 pinch anise seed
2 dashes fish sauce
Directions
  1. Bring onions and mushrooms to a boil.

  2. Reduce heat and simmer. Add remaining ingredients and simmer approximately 5-10 minutes.

  3. Add Tofu Shirataki if desired. If you do, then rinse it for a few minutes and boil it with soup.

  4. Salt to taste.

  5. Serve hot with soy sauce or sriracha, jalapenos, cilantro, basil or other tasty add ons. Refrigerate leftovers.
