Funky soup in a clear broth. Caution: Almost zero salt and fat.

Ingredients

cups water (just enough to barely cover vegetables) |
| 75 |
grams tofu, extra firm, cubed |
| 250 |
grams mushrooms, sliced |
| 160 |
grams onion, sliced |
| 80 |
grams tomato, wedged |
| 85 |
grams pineapple, fresh, wedged |
| 1 |
tbsp lime juice |
| 1/2 |
tsp garlic |
| 2 |
pinches turmeric |
| 2 |
pinches mace |
| 1 |
gram Cardamom (about 3 pods) |
| 1 |
pinch anise seed |
| 2 |
dashes fish sauce |
Directions
- Bring onions and mushrooms to a boil.
- Reduce heat and simmer. Add remaining ingredients and simmer approximately 5-10 minutes.
- Add Tofu Shirataki if desired. If you do, then rinse it for a few minutes and boil it with soup.
- Salt to taste.
- Serve hot with soy sauce or sriracha, jalapenos, cilantro, basil or other tasty add ons. Refrigerate leftovers.
