My Chicken Quesadillas
| 2 | tortilla |
| 2 | tbsp light sour cream |
| 1 | tsp frank's red hot sauce |
| 2 | oz cheddar cheese |
| 1 | oz monterey jack cheese |
| 2 | oz grilled chicken |
| 1 | tsp olive oil |
| 1/4 | c lime juice |
| 1/2 | tsp garlic powder |
| 1/2 | tsp onion salt |
| 1/2 | tsp paprika |
| 1/2 | tsp oregano |
- preheat oven to 450-ish
- mix lime juice, olive oil, and seasonings together
- slice frozen chicken breasts in half along the bias, marinade in sauce, 30 min
- grill chicken breasts
- shred chicken breasts
- sprinkle 1/2 amount of cheese on 1 tortilla, top with shredded chicken
- sprinkle remaining cheese on top of chicken and top with other tortilla
- bake in oven for 10 minutes or until cheese is melted and tortillas are crispy to taste.
