Spinach Vegetable Qucihe Recipe

hreat for a hearty breakfast.

Ingredients
1 teaspoon extra virgin olive oil
1 onion, chopped
10 oz spinach, thawed, drained
5 eggs, beaten
3 cups cheddar cheese, shredded
1/4 teaspoon salt
1/8 teaspoon pepper
4 oz mushroom pieces, drained
1/4 teaspoon red pepper, cracked
Directions
  1. heat evoo in skillet on medium heat add onion and cook until onions are clear and tender.

  2. combine all ingredients in round baking dish pre-treated with non-stick spray

  3. bake at 350 for 30 mins or until eggs are set.

  4. can add some milk to thin out consistency if you like
