Vegetarian Potato Soup Recipe

Makes 4 servings


Simple, fast, cheap.

Ingredients
4 large potatoes
1 onion
2 stalks celery
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter
4 cups water
Directions
  1. Wash, peel, cube potatoes.

  2. Dice onion and celery.

  3. Saute onion and celery in melted butter until soft and translucent.

  4. Add celery, onions, potatoes and water to pot.

  5. Simmer about an hour till potatoes cooked.

  6. With spoon, mash some of the potatoes against the side of the pot or add some mashed potato flakes to thicken.

  7. Add salt and pepper to taste.
