Simple, fast, cheap.
| 4 | large potatoes |
| 1 | onion |
| 2 | stalks celery |
| 1/2 | teaspoon salt |
| 1/8 | teaspoon pepper |
| 2 | tablespoons butter |
| 4 | cups water |
- Wash, peel, cube potatoes.
- Dice onion and celery.
- Saute onion and celery in melted butter until soft and translucent.
- Add celery, onions, potatoes and water to pot.
- Simmer about an hour till potatoes cooked.
- With spoon, mash some of the potatoes against the side of the pot or add some mashed potato flakes to thicken.
- Add salt and pepper to taste.
